In a slow cooker, combine everything except the frozen vegetables.&lt;/div&gt;&lt;div class="separator" style="clear: both;"&gt;2.  Cook for about 6 hours on high.&lt;/div&gt;&lt;div class="separator" style="clear: both;"&gt;3. Grease a 13×9 baking dish. Mix together chicken, tomatoes, chilies, peppers, and onions in the dish.&lt;/li&gt;&lt;li&gt;In a small bowl combine the oil and spices. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.&lt;br /&gt;Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.&lt;br /&gt;&lt;br /&gt;This is SO easy and SO good.  I toasted the buns and we put cheddar cheese slices on the sandwiches too. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: large;"&gt;Cooking directions:&lt;/span&gt;&lt;br /&gt;1 Heat 3 Tbsp olive oil in a large skillet (a skillet that has a cover) on medium high heat. Put the flour in a wide bowl, mix in a generous sprinkling of salt, pepper, and paprika. Dredge the chicken pieces lightly in the flour mixture and put in the pan to brown. (You can skip the flour dredging part if you want. It just makes a nicer coating for the chicken.) Cook a few minutes on each side, just enough so that the chicken has browned. Use a slotted spoon to remove from pan and set aside.&lt;br /&gt;&lt;br /&gt;2 Add the rice to the pan to brown. Add a little more olive oil if necessary. Stir first to coat the rice with the olive oil in the pan. Then don't stir too much or you will prevent it from browning. Let it brown and then stir a little to let more of it brown. Then add the onion and garlic. Cook the onion, garlic and rice mixture, stirring frequently, until the onions have softened, about 4 minutes.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;3 Place the chicken pieces, skin-side up, on top of the rice. In a separate bowl, mix together the stock, tomato, salt, and oregano. Pour the stock mixture over the rice and chicken. Bring to a simmer, reduce the heat to low, and cover. Let cook for 20-25 minutes, depending on the type of rice and the instructions on the rice package, until the rice and chicken are done. Fluff the rice with a fork. If you want you can sprinkle with some peas. &amp;nbsp;Actually my 13 yr old gives the chicken a 5.&lt;br /&gt;My husband liked the flavor of the chicken but said it was a little too dry - um, that could have had something to do with the fact that I'm terrified of under-cooked chicken and I tend to cook it a little (or a lot) longer than the recipe says.&lt;br /&gt;&lt;br /&gt;The chicken had a lot more flavor than I expected, well I used a lot more lemon juice than the recipe called for so that could have contributed. &amp;nbsp;The potatoes were nice and crispy &amp;nbsp;I did stir them with a spatula every 20 min during the hour cooking time. &amp;nbsp;That helped to keep them from sticking to the pan and helped them become crispy on all sides.&lt;br /&gt;&lt;/td&gt;&lt;/tr&gt;&lt;/tbody&gt;&lt;/table&gt;&lt;b&gt;&lt;u&gt;Lemon Chicken&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;&lt;i&gt;Ingredients:&lt;/i&gt;&lt;br /&gt;2 tbsp. lemon zest&lt;br /&gt;1/3 cup freshly squeezed lemon juice (1 large lemon = 1/3 cup, I used 2 lemons)&lt;br /&gt;2 cloves garlic, crushed&lt;br /&gt;2 tsp. fresh thyme leaves&lt;br /&gt;1 tsp. fresh rosemary leaves, finely minced&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 tsp. black pepper&lt;br /&gt;2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks (I used boneless, skinless breasts)&lt;br /&gt;2-3 tbsp. melted butter&lt;br /&gt;Thinly sliced lemons, for garnished&lt;br /&gt;&lt;br /&gt;&lt;i&gt;Directions:&lt;/i&gt;&lt;br /&gt;Combine the lemon zest, lemon juice, garlic, thyme, rosemary, salt and pepper in a large zipper-lock plastic bag.  Seal the bag and shake well to blend.  Place the chicken pieces in the bag with the marinade, pressing out excess air and sealing once more.  Refrigerate and let marinate for 2 hours. &lt;br /&gt;&lt;br /&gt;Preheat the oven to 425˚ F.  Remove the chicken pieces from the marinade and transfer to a baking dish, skin-side up, reserving the leftover marinade.  Brush the top of each piece of chicken with melted butter. &lt;br /&gt;&lt;br /&gt;Bake for 50-55 minutes, until the skins are crispy and well-browned.  Halfway through baking, pour the remaining marinade over the chicken pieces in the baking dish.  Once fully baked, cover loosely with foil and let rest 10 minutes before serving. Add chicken breasts (I cut mine into small pieces usually, but they could go in whole) and cover with the sauce.  Cook on low for 6-8 hrs or high for 4 hrs. &lt;br /&gt;&lt;br /&gt;This chicken turns out so moist and just falls apart. Transfer the onions to a large bowl and set aside. Season sauce with additional salt and pepper to taste.&lt;br /&gt;&lt;br /&gt;Shred the chicken into bite-sized pieces. Add to the onin mixture, and add 1/4 cup of the enchilada sauce, 1 cup cheese, and the cilantro. Toss to combine.&lt;br /&gt;&lt;br /&gt;Stack the tortillas on a plate and cover with plastic wrap; Microwave on high until warm and pliable, 40-60 seconds. Spread the tortillas on a clean work surface, and spoon 1/3 cup of the chicken mixture evenly down the center of each. Tightly roll each tortilla and lay seam-side down in a greased 9x13 inch baking dish.&lt;br /&gt;&lt;br /&gt;Lightly spray the tops of the enchiladas with cooking spray. Place in the oven, uncovered, for about 7 minutes, or until the tortillas start to brown slightly (skip this step if you don't like the crunch).&lt;br /&gt;&lt;br /&gt;Reduce heat to 400. Remove enchiladas and pour sauce evenly on top. Top with the remaining cheese.
